In the heart of Camana Bay, Cask Whisky is doing more than serving world-class spirits — it's redefining what it means to enjoy whisky in the Cayman Islands. From becoming the first bar on island to accept Bitcoin as payment, to hosting a sold-out Whisky & Doughnuts evening that left guests raving, Cask is proving that tradition and innovation can go hand in hand — neat, with a twist.
Founder, Rob Eyers, says Cask Whisky has quickly become a hub for both whisky lovers and forward-thinking locals who appreciate quality, creativity and a little bit of fun.
“We opened Cask with the idea that it should be more than a whisky bar,” said Eyers. “It’s a space for community, conversation and experiences you won’t find anywhere else.”
One of those experiences is Cask’s seamless Bitcoin payment option, which launched officially at a lively crypto-themed opening night on 17 July, held in collaboration with the Seven Mile Bitcoin User Group. The event brought together members of Cayman’s flourishing blockchain scene — an audience that immediately appreciated the ease of paying for their drinks in Bitcoin.
“The Cayman Islands is home to some of the most exciting crypto innovation in the world,” said Eyers. “So we thought — why not offer those enthusiasts a place to actually use their crypto in real life, with something they love?”
The process is as easy as it gets: Staff enter the purchase amount into a platform and generate a QR code, and the customer scans it to complete the transaction.
“Within seconds, it’s done,” Eyers explained. “It’s fun, efficient and it reflects where the world is going.”
But if the crypto launch sparked interest, it was the Whisky & Doughnuts evening on 26 July that truly captured the imagination — and taste buds — of island residents. The event, which sold out in four days, featured a decadent tasting menu of gourmet doughnuts paired with award-winning whiskies from Macallan, Glenmorangie, Balvenie and more.
The concept came to life through a creative collaboration between Cask and Scratch, a boutique bakery recently opened by local entrepreneur Brittanni Seymour-Welds. With input from Eyers’ business partner Matt McPherson— who has years of experience in whisky and food pairings — the team developed flavour combinations that were nothing short of extraordinary.
“We had doughnuts with notes of citrus, coffee, cocoa, coconut and vanilla, each matched to a specific whisky that complemented or contrasted the flavours perfectly,” said Eyers. “It wasn’t just delicious — it was art.”
Guests were treated to a guided tasting, blending expert knowledge with playful indulgence. The response? Overwhelmingly positive.
“We’ve had so many people already asking when the next one is,” Eyers shared. “It was a fantastic night — full of laughter, learning and genuine surprise at how well those pairings worked.”
